when life gives you rain... make muffins

I truly am grateful we've been getting all this amazing rain. It was so miserable last summer when all the lawns were dead and flowers shriveled up the day after you planted them. And even more importantly, I know the lack of rain put an enormous amount of stress on our nation's farmers, who we are obviously incredibly indebted to.
 
But although I know we need rain and it's a blessing, it has been dampening my spirit a little lately.
 
I mean, enough is enough already.
 
So you know the old saying... When life gives you lemons, make lemonade? Well I don't know what it is about baking that brightens my spirit on a dreary day -- but it does.
 
So when life gives me rainy day after rainy day after rainy day, I make muffins. (And brownies. And cookies.)  
I don't know what it is about mixing up a big, happy, batch of chocolate chip cookies or brownies -- but it cheers me up.
 
And yesterday, blueberries were on a mega-sale at HyVee, so I whipped up a batch of good ole blueberry muffins.
 
You can think whatever you want about me, but I've never made  muffins that didn't come out of one of those "pre-made mix bag things." So it was exciting to try my completely from-scratch muffin skills.
 
I think Preston truly thought I had lost my mind, when he came in to the kitchen and saw me taking pictures of my bowl of blueberries and pre-baked blueberry muffins... But I'm that dedicated to my blog, people. So I kept snapping away.

Anyway, hoping you had a great weekend and have an even better week! We had an awesome day on Friday - we were able to go to Okoboji for the day and spend some time out on the boat in the SUN, even. Then when the sun went away, we hung out at the indoor water park. It was so adorable to watch our little nephew experience the water park for the first time. His mom and dad were a little worried about how noisy it is at an indoor water park, but after a little while getting used to the noise he had a blast! I think it probably helped a little that the water in there was as warm as bath water. :)
 
 Due to an incredibly sick cat (and rainy weather), we ended up spending Saturday and Sunday at home.
 
The fog from this morning has cleared and the gorgeous sun is out, so I'm going to wrap this up. Have a wonderful week, everyone!
